In this Spotlight Interview with Crest Africa, Dr. Blessing reflects on the inspiration behind her journey, the importance of culinary education, why food safety and quality remain non-negotiable, and her vision for positioning African cuisine on the global stage.

CA: Your career brings together culinary arts, nutrition, food safety, entrepreneurship and education. What first inspired you to pursue this path?

Dr. Blessing: My journey into the culinary industry was born out of a genuine passion for serving people through food and creating memorable experiences. I have always believed that food is far more than nourishment. It is a universal language that connects cultures, builds relationships and creates lasting memories.

As I grew in the industry, I realised that excellence in catering goes beyond preparing delicious meals. It requires a deep understanding of nutrition, food safety, business management, customer experience and continuous innovation. That understanding inspired me to pursue professional certifications and higher education so I could build a business that operates at international standards.

Today, every meal we prepare reflects our commitment to quality, safety, creativity and professionalism. My mission has evolved from simply cooking to transforming lives through food, education and entrepreneurship.

CA: You founded both Cabbilicious Foods and Cabbilicious Culinary School. Why was it important to combine premium catering services with professional culinary education?

Dr. Blessing: While building Cabbilicious Foods, I noticed a significant gap in the hospitality industry. Many aspiring chefs possessed talent but lacked structured professional training in areas such as food safety, costing, kitchen management, menu engineering and customer service.

I realised that if we wanted to elevate the African culinary industry, we had to invest in people, not just businesses. That vision gave birth to Cabbilicious Culinary School.

Our goal is not merely to teach people how to cook. We equip them with the technical knowledge, entrepreneurial mindset, leadership skills and global standards required to build sustainable careers and successful food businesses. For me, education is one of the most powerful ways to create lasting impact. Every graduate who succeeds becomes another ambassador for excellence in African hospitality.

CA: Through your organisations, you train culinary professionals while delivering catering services across corporate, executive and luxury events. What principles have enabled you to maintain such high standards?

Dr. Blessing: Technical cooking skills alone are no longer enough. Today’s culinary professionals must develop creativity, discipline, business intelligence and adaptability. Beyond culinary excellence, they need to understand international food safety standards, menu engineering, recipe development, food costing, financial management, leadership, customer experience and continuous learning.

At Cabbilicious Foods, our greatest strength is our systems. We operate with clearly defined standard operating procedures, quality control measures, staff training and detailed event planning. Consistency doesn’t happen by chance. It is built through preparation, accountability and attention to detail.

We also invest heavily in our people because well trained professionals consistently produce excellent results. Most importantly, we never treat any client as small. Whether we are serving a boardroom meeting or a large corporate event, every client receives the same level of excellence, professionalism and respect.

CA: As a certified nutritionist and food safety professional, how do nutrition, food safety and quality assurance influence your approach to hospitality?

Dr. Blessing: Food is one of the few products people consume directly, which means there is absolutely no room for compromise.

Every menu we design considers nutritional balance, food safety, freshness, hygiene and presentation. We implement strict quality assurance systems from sourcing ingredients to production, transportation and final service.

Our clients trust us because they know we prioritise their health as much as their satisfaction. As a nutritionist, I also understand that healthy food can be flavourful, visually appealing and culturally relevant. Exceptional catering should delight the palate while promoting wellness and safety.

CA: Your organisation serves African, Continental and Oriental cuisine. How do you maintain consistency while delivering such diverse culinary experiences?

Dr. Blessing: Versatility is one of our greatest strengths, but consistency remains our highest priority.

We achieve this through continuous research, standardised recipes, detailed production systems, regular staff training and strict quality assurance. Every cuisine requires cultural understanding and technical precision, so our team continually studies global culinary trends while preserving authenticity.

We embrace innovation without compromising tradition. Whether preparing African delicacies, Continental cuisine or Oriental dishes, our objective remains the same: delivering exceptional taste, premium presentation and unforgettable customer experiences.

CA: Developing people is clearly central to your vision. Why is that so important to you, and what do you hope for the future of African cuisine?

Dr. Blessing: Success becomes more meaningful when it is shared. I believe true leadership is measured not only by what you achieve personally but by the number of people you empower to succeed.

Africa has extraordinary culinary talent, but many aspiring professionals lack access to structured training and mentorship. Through Cabbilicious Culinary School, we are building confident professionals who possess technical competence, business knowledge, ethical values and leadership skills.

My greatest satisfaction comes from seeing former students establish successful businesses, secure international opportunities and become employers themselves. That is how industries grow.

African cuisine deserves a prominent place on the global culinary stage because it is rich in history, diversity, nutrition and innovation. To achieve greater recognition, we must invest in education, research, documentation, international culinary exchanges, branding and standardisation. We must also tell our own stories with confidence because our indigenous ingredients and traditional cooking techniques are valuable assets that deserve global appreciation.

CA: Finally, what legacy do you hope Cabbilicious Foods and Cabbilicious Culinary School will leave for Africa’s hospitality industry?

Dr. Blessing: My vision extends beyond building a successful business.

I want Cabbilicious Foods and Cabbilicious Culinary School to become institutions recognised for transforming lives, setting industry standards and raising globally competitive culinary professionals. I hope our legacy will be one of excellence, integrity, innovation and empowerment.

I envision an Africa where our chefs compete confidently on international platforms, our culinary schools produce world class professionals and our indigenous cuisines receive the global recognition they deserve.

If future generations can look back and say that our work helped redefine African hospitality and inspired thousands of entrepreneurs to pursue excellence, then I will consider our mission fulfilled.
